Vegan Pancake Recipe

I've been vegetarian for quite awhile and when I started I thought that was hard. Basically no more fast food restaurants or anything like that, and eating at family or friends homes became awkward. And then came veganism. While I've made food from "Cheddar Cheese" Broccoli Soup to Vegan Enchiladas, I figured for today I could share a more simple vegan recipe with you guys, for a breakfast food everyone loves pancakes. 

1 Cup Flour
1 3/4 Cup Vanilla Soy Milk 
1 1/2 Tablespoons Baking Powder
1 Tablespoon Brown Sugar
1/8 Teaspoon Salt
2 Tablespoons Vegetable Oil
1 1/2 tablespoons coconut oil
& Maple Syrup

First get the pan hot, hot enough that if you drip water on it, the pan "spits", then put half a table spoon of coconut oil in. Once this melts and you spread it around you can then put your mixed ingredients (everything except the coconut oil and maple syrup). and pour in in desired size. Flip when there are bubbles on the top and the edges look firm. Once the other size is cooked then you're done. This makes 7-8 average size pancakes.

  2. I really like how simple the ingredients are and probably more flavorful since you are using coconut oil and vanilla soy milk! YUM! I think anyone that is not vegan will love these pancakes!
