Making Vegan Cranberry Salad

I know that I said Thanksgiving is officially over when I shared my Homemade Christmas Cards but I really wanted to show off the cranberry salad that I made for Thanksgiving. It turned out a lot better than I thought that it would (even if it isn't photogenic), and healthy enough for #fitnessfriday. It's easy to make too, about 15 minutes prep time, and this cranberry salad recipe is totally vegan something that can't be said about most traditional Thanksgiving foods.

1/2 Cup Walnuts
2 Cups Strawberry Syrup (unsweetened)
1/2 Cup Diced Celery
1 Cups Diced Apples
16 oz Cranberries
The first step is roasting the walnuts. This will give them a darker flavor than just putting them in the salad uncooked. Then heat up the strawberry syrup on the oven to a low simmer. Use a food processor to puree the cranberries, leaving a bit of texture. Then Cut celery and apples and add them it. Then put the syrup in stir and put in the refrigerator.  Once cooled it's ready to serve.

  1. This looks fabulous! Definitely gonna try this out for Christmas.
