Making Vegan Personal Pizzas

Lately I've been super busy with school as well as some modeling jobs, so when I'm looking for something vegan to eat I go for things that are fast and easy. One of my favorites is this tofu vegan pizza, so I decided I could share it with you. It does have a few more steps and ingredients than that Simple Spicy Hummus

12 oz Tofu
Vegan Cheese
3-4 Tomatos
Vegan Sour Cream
1 White Onion
2 Cups Salsa
Chili Powder
Red Pepper
Curry Powder
1 Clove Garlic
The first step is cutting up tomatoes, diced to be precise. Then the tofu. Unlike most recipes I do that include this soy product (take for example my Barbecue Tofu) I wanted the pieces as small as possible. To achieve this, after cutting it into small cubes I then used a potato masher  to make them even smaller. Then diced the onions.

First I started frying the onion, garlic and tofu in the frying pan. After five minutes on high I switched to medium heat and added the tomatoes and salsa. Then added the spices to taste and let it stay on medium. At this time I put the pizza crusts (random vegan ones from the store, always be sure to check ingredients) in the oven with olive oil brushed on them. Once brown I brought them out and put the frying pan mix on them. On top I finished with a vegan cheese and sour cream.

*You can also add bell peppers for a thicker texture.
