Fitness Friday: Making Vegan "Cheddar Cheese" Broccoli Soup

 Today's friday, and that means we're back here with our second ever Fitness Friday. If you remember last week I showed you guys my unfit body and one of the things I talked about doing was eating healthier. One major way to do this is to cut animal products out of your diet (or reduce them at least) since they're some of the biggest calorie carrying foods, not to mention the moral issues with factory farming. So I decided I could make Vegan Cheddar Broccoli Soup and share my recipe.

1 onion, diced
5 cups of chopped broccoli florets
2  tablespoons coconut oil
3 1/2 cups rice or soy milk
1/4 cup corn starch (dissolved in cold water)
1 teaspoon sea salt
2 teaspoons pepper
1 1/2 cup vegetable stock
7 oz vegan cheddar cheese

In a 4 to 6 quart pot heat the coconut oil on high and add the onion. After 1-2 minutes add in the broccoli salt and pepper and stir as needed for the next 5 minutes or until the onion is translucent and the broccoli is tender. Pour in the vegetable stock and let boil for 15 minutes. Then remove the pot from the heat and add in one cup of your soy or rice milk and blend the mixture until desired smoothness. Put the pot back on high heat, and add in the rest of the milk. Once boiling add in cheese and as soon as this melts, you're done.

 Finding the ingredients, wasn't nearly as hard as I thought it'd be, everything was actually at my local Kroger, and making to soup was a breeze. If you're more of a stew person like I am, you can always add extra cheese on top and leave a few cooked broccoli pieces out of the mix when you blend it. I think this Vegan Cheddar Cheese broccoli soup tastes just as good as the real thing, and it has a whole lot less calories.
